the heck is Aebleskiver? Well the best way to describe it is by saying it
is a tasty Danish pancake treat. We enjoy this treat each year at Danish
Days thanks to the dedication of our Methodist Church ladies. Not only do
we get a chance to partake in an ethnic breakfast served also with
sausage, juice & of course coffee, but the ladies have been able to
fund many projects for their church with the profits. They were able to
install a wheel chair ramp with help from this event.
There are several legends of how the
delicacy came to be. One of the most entertaining is connected to when the
ancient Viking warriors would go off to pillage and conquer. When the
battles were over, they noticed the dents in their shields and being the
resourceful people the Danes are, they flipped them over & poured a
pancake batter in the hole & made themselves breakfast.
Well our Methodist ladies don’t make the
Aebleskiver in their shields but they do cook up a storm. They make
countless numbers of the round pancakes that resemble tennis balls in size
and shape but taste like heaven. Although, they would not share their
secret recipe, we are allowed to print this one instead.
Aebleskiver Recipe
2 egg whites
2 cups all purpose flour
2 teaspoons baking powder
1 tablespoon white sugar
½ teaspoon baking soda
½ teaspoon salt
4 tablespoons melted butter
You will need an Aebleskiver pan to make
your pancakes (unless of course you can locate a shield with a few dents
in it.) Place a few drops of oil in the bottom of each pan, pour in batter
& turn frequently. Many people use a long knitting needle to turn each
aebleskiver. |
